A quick and flavorful 15-minute sesame noodle recipe featuring a rich, tangy sauce made from soy sauce, maple syrup, sesame oil, tahini, and fresh ginger. Tossed with green onions, sesame seeds, peanuts, and optional edamame, this versatile dish can be served hot, warm, or at room temperature, perfect for a delicious and easy meal any time.

Ingredients

For the Sauce:

  • ¼ cup soy sauce
  • 1 tablespoon maple syrup (or raw brown sugar)
  • 1 tablespoon sesame oil
  • 1 tablespoon tahini
  • ½ tablespoon peanut butter
  • 1 tablespoon rice vinegar
  • 1 tablespoon freshly grated ginger (or 1 teaspoon ground ginger)
  • 2 cloves garlic, minced
  • ¼ teaspoon hot chili flakes (or ½ teaspoon sriracha)

For the Noodles:

  • 10 ounces uncooked noodles
  • ½ cup green onions, finely sliced
  • 1 tablespoon sesame seeds
  • 1 tablespoon chopped peanuts (optional)
  • 1 cup edamame, defrosted (optional)

Toppings:

  • Extra green onions
  • Extra sesame seeds

Instructions

  1. Prepare the Noodles: Soak the uncooked noodles in hot water following the packet directions until tender but still firm. This typically takes about 5-7 minutes depending on the noodle type.
  2. Make the Sauce: In a small bowl or jar, combine soy sauce, maple syrup, sesame oil, tahini, peanut butter, rice vinegar, freshly grated ginger, minced garlic, and hot chili flakes. Mix well until the sauce is smooth and emulsified.
  3. Drain and Rinse: Once the noodles are cooked, drain them thoroughly and rinse under cold running water to stop the cooking process and prevent sticking.
  4. Toss the Noodles: Place the drained noodles in a large pan or bowl. Add the prepared sauce, sesame seeds, sliced green onions, chopped peanuts (if using), and defrosted edamame. Toss everything together evenly to coat the noodles and distribute the ingredients.
  5. Garnish and Serve: Garnish the noodles with extra sesame seeds and green onions. Serve immediately while hot, or allow to cool and serve warm or at room temperature as preferred.

Notes

  • Note 1: Peanut butter adds creaminess and depth to the sauce, but you can omit it or substitute with more tahini for a nut-free option.
  • Note 2: Use any type of noodles you prefer such as soba, spaghetti, or rice noodles. Cooking times will vary accordingly.
  • This dish is versatile and can be enjoyed hot shortly after making or chilled for a refreshing cold noodle salad.
  • Add protein like grilled chicken, tofu, or shrimp for a more substantial meal.
