Ideal for a nutritious lunch or light dinner with vibrant Asian-inspired flavors.

Ingredients

Noodles

  • 150 grams rice noodles (or any kind of noodles)
  • Salt (optional - not necessary)

Peanut Sauce

  • 4 tbsp peanut butter (crunchy or creamy)
  • 2 small cloves garlic
  • 1 tbsp light soy sauce
  • 1 tbsp sriracha (or any spicy sauce; use 1/2 tbsp for less spice)
  • 1/2 tbsp lemon juice
  • 1 tbsp honey (or maple syrup or 1/2 tbsp sugar)
  • 5 tbsp water
  • 1/2 tbsp sesame oil (optional but recommended)

Garnish

  • Sesame seeds
  • Spring onions
  • Crushed peanuts

Instructions

  1. Cook Noodles: Boil the rice noodles according to the package instructions. Optionally, add salt to the boiling water if desired. Once cooked, drain and set aside.
  2. Prepare Peanut Sauce: While the noodles are boiling, combine the peanut butter, garlic cloves, light soy sauce, sriracha, lemon juice, honey, water, and sesame oil in a blender. Blend until the sauce is smooth and creamy.
  3. Mix and Serve: Pour the prepared peanut sauce over the drained noodles and toss thoroughly to coat evenly. You can serve the noodles at room temperature or cold. For warm noodles, cook the coated noodles on medium flame for 1 to 2 minutes, stirring gently. Add extra water if the sauce is too thick. Transfer to serving bowls and garnish with sesame seeds, chopped spring onions, and crushed peanuts before serving.

Notes

  • You can substitute honey with maple syrup or sugar as a sweetener.
  • Adjust the spiciness by controlling the amount of sriracha used.
  • Sesame oil is optional but adds a nice flavor depth.
  • Feel free to use any type of noodles if rice noodles are unavailable.
  • Adding more water to the sauce can help achieve your desired consistency.
